Ingredients :
- Atta / Maida – ½ cup
- Baking powder – ½ tsp
- Baking soda – ¼ tsp
- Cocoa powder – 2 tbsp
- Cinnamon powder – ¼ tsp
- Ginger powder – ¼ tsp
- Nutmeg powder – ¼ tsp
- Salted butter – ¼ cup
- Brown sugar – ½ cup
- Curd – ¼ cup
- Almonds, Cashews, Pistachios – 6 tbsps
- Tutti frutti, cranberries – 2 tbsps
- Orange juice – 6 tbsps
Method :
- In a bowl, sieve the dry ingredients. Add to it all the dry fruits.
- In a pan, heat the orange juice and tutti frutti & cranberries. Cook for 5 mins and keep it covered to cool down.
- In another bowl, mix the wet ingredients and to it add the cooled juice and dry fruit mixture.
- Preheat the over at 160C for 15 mins. Grease an 6 or 7 inch cake tin with butter / oil, line it with parchment paper.
- Mix dry & wet ingredients. It should be thicker than the usual cake batter. Pour the batter into the greased tin.
- Tap the tin a few times so that the batter spreads evenly and the extra air bubbles escape.
- Bake for approx.. 40-45 mins at 160C or until the toothpick comes out clean.
- Let it rest for 5mins & then take it out.
